CAKE:
3 - eggs, beaten
2 c. - sugar
c. - vegetable oil
2 tsp. - vanilla
2 c. - flour
2 tsp. - baking soda
2 tsp. - cinnamon
tsp. - nutmeg
tsp. - salt
4 c. - apples, diced & unpeeled
1 c. - walnuts, coarsely chopped

FROSTING:
2 (3 oz.) pkg. - cream cheese
c. - butter
1 c. - confectioners sugar
tsp. - vanilla

Directions:
Directions:
Beat the first 4 items together. Then combine the next five items into the mixture. Fold the apples & walnuts into the mixture from above. Spread into a Pyrex 13 x 9 x 2 dish. Bake 325 for 50 to 60 minutes or until it tests done. Cool. Make frosting. Combine frosting ingredients, whip until smooth and spread over cake.
