1 lb, ground beef
1 good sized onion - small dice
1 green pepper - diced small
1 can kidney beans, drained
2 tsp. chili powder- or more
1 large can crushed tomatoes
1 can tomato paste
salt and pepper to taste

Directions:
Directions:
Brown beef in a little oil and break up into small pieces. Add onion and green pepper and continue to saute. Add crushed tomatoes, salt and pepper. Also add a little water. Cover and simmer for 30 minutes. Stir and add beans, chili powder, and some tomato paste as needed to thicken. You may need to add some water also. Simmer for at least another 15 minutes or so. I serve this over white rice. You can top each serving with a little cheddar cheese and serve with some corn chips.
