2 T. olive oil
2 red onions, sliced
2 heaped T. brown sugar
1 large bag salad greens
9 oz. blueberries
6 T. ready-made dressing
salt & pepper

Directions:
Directions:
Heat the oil in a frying pan. Add sliced onions and brown sugar and cook over a medium heat for 10 minutes until onions have become brown, sticky and caramelized. Leave to cool. May be prepared up to this point a day before. Put salad greens into a large bowl and toss together with the onions, blueberries, dressing, salt and pepper. Can also substitute small seedless grapes, strawberries or raspberris if blueberris are not available.
