1/4 lb. butter
2/3c. white sugar
2 eggs
1c. buttermilk**
1/2 tsp. baking soda
1c. cornmeal
1c. all purpose flour
1/2 tsp. salt
( drizzle honey into it as well if you like the extra sweet flavor)
** if you don't have any buttermilk here's a few quick substitutes!
1. mix 1-3/4 tablespoon of cream of tarter into 1 cup of milk.
2. 1 tablespoon of lemon juice or white vinegar in 1 cup of milk, which you stir and let stand for 5 minutes.
3. or you can use plain yogurt or sour cream.

1. Preheat oven to 375*. Grease an 8" square pan.

2. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs & beat till well blended.Combine buttermilk with baking soda and stir into mixture in the skillet. Stir in the cornmeal, flour, and salt until well blended and a few lumps remain. Pour batter into prepared 8" greased pan.

3. Bake in the preheated oven for 30-40 mins or until toothpick inserted in middle comes out clean.
