3 - 4 cucumbers, peeled and very thinly sliced (use a slicing grater or the slicing blade of the salad shooter)
salt
pepper
2 T vinegar or to taste
1/2 c. sour cream
thinly sliced onion (optional)
thinly sliced green pepper (optional)

Directions:
Directions:
After cucumbers have been sliced add onions and green peppers if using. Sprinkle with salt. Set aside and allow to rest for at least 1/2 hour. Longer than that is ok. This allows the cucumbers to wilt. Drain off liquid then add black pepper, vinegar and sour cream. Add more vinegar according to taste.

You can substitute half and half or other cream for the sour cream. If you live on a farm and happen to have a cow, fresh cream is the best.
