4-5 medium size potatoes, peeled and sliced 1/4 inch thick
1 small onion, sliced very thin, separate the rings
salt
pepper
white sauce (instructions follow)
1/2 c. grated cheddar cheese

For white sauce: In small pot melt 4 T. butter, add 4 T. flour stirring constantly until well blended. Add 1 c. milk or enough to make a med. sauce.

Generously butter a 2 qt. baking dish. Put a layer of potatoes in the dish and scatter onions over. Salt and pepper to taste. Then another layer of potatoes and onions. Pour white sauce over all spreading to cover all potatoes. Cover with foil. Bake at 350 degrees for about 1 hr. until fork tender. When done, sprinkle grated cheese over all and allow to remain in the oven until cheese is melted.
