3 eggs
1 1/2 c. sugar
2 c. flour
2 c. peeled raw zucchini, grated
2/3 c. oil
1 t. salt
3 t. vanilla
1 c. chopped nuts
1/2 t. soda
2 t. baking powder

Directions:
Directions:
In mixer beat eggs, sugar, oil and zucchini. Sift dry ingredients together; add to egg mixture. Add nuts and vanilla, mix well. Pour into 2 loaf pans (3 mid size pans) Bake at 350 degrees for 1 hr. (for large pans) Adjust baking time for smaller pans. Cool and remove from pans. Will keep indefinitely in the refrigerator. Also freezes well.
