3-4 T butter or margarine
2 slices bread (a courser textured bread, like homemade is best) cubed in 1/2 inch cubes
3 - 4 eggs
salt and pepper
1/4 c. milk
1 or 2 T. grated cheddar cheese

Directions:
Directions:
In your favorite skillet for scrambling eggs, melt the butter. Over moderate heat toast the bread cubes, tossing often to toast on all sides. Prepare the eggs for scrambling seasoning with salt and pepper and add milk. When bread is toasted, pour egg mixture over all, add about 2 T. grated cheddar cheese if desired and finish cooking.

This recipe can be added to depending on the number of people to serve. I remember having this often when we were growing up, especially on Friday's during lent. Also, you can add other ingredients such as chopped green onions, mushrooms (sauted) etc.
