1 prepared pie crust
6 oz. fresh asparagus, trimmed and chopped
2 Tbsp butter
1 C monterey jack cheese shredded
1 C swiss cheese shredded
3 eggs
1/3 C milk
2/3 C mayo
3 Tbsp flour
1/8 C finely chopped yellow onion

Directions:
Directions:
Cook asparagus in microwave 4-6 minutes. Partially bake deep dish pie crust, 8-10 minutes in a 325 Degree oven. Let cool. Mix ingredients with a whisk until well blended. Fill cooled pie crust with quiche mixture. Bake at 350 degrees for 35 minutes. Check, continue to bake until center is set.

I first had this a Sprague's Kinderhook Lodge while on a quilt retreat. It is Wonderful! My kids love it! We've had it for breakfast and dinner. (not on the same day!)
