Soak one package tapioca in 1/2 cup cold milk for 30 minutes.

1 package soaked tapioca
3 Tbls sugar
1 egg yolk
2 cups milk
1/8 tsp salt
2 Tbls sugar
1 egg white
3/4 tsp vanilla

Directions:
Directions:
Mix tapioca, salt, 3 Tbls sugar, milk, and egg yolk in pan.
Let stand 5 minutes. Beat egg white until foamy, add 2 Tbls sugar and beat until they form stiff peaks. Set aside. Cook tapioca mixture, stirring constantly until it comes to a full boil. Add hot mixture to egg whites, stirring quickly. Add vanilla and mix well. Serve warm or cold.
