2 pounds lean sirloin of beef
4 Tbls butter
1/2 pound mushrooms, washed and sliced
1/2 cup tomato juice
1 clove garlic, peeled and crushed
2 tsp salt
1/8 tsp pepper
1 can cream of mushroom soup
1 cup sour cream
egg noodles

Directions:
Directions:
Trim all fat from beef and cut into strips about 3'' long and 1/2'' wide. Heat skillet to medium/high heat and melt 2 Tbls butter, add mushrooms and saute golden, then remove from heat. Melt remaining butter, add meat and saute stirring contantly for 4 minutes. Add tomato juice and garlic and cover leaving it vented for steam. Simmer for 30 to 40 minutes or until meat is tender. Stir in mushrooms, seasonings, soup, and sour cream into the meat mixture just before serving. Heat through, then serve with egg noodles.
