2 Tbls oil
4 pound beef round or chuck roast
1 can cream of mushroom soup
1 package dry onion soup mix
1 1/4 cups water, divided
6 medium potatoes, quartered
6 carrots, cut into 2 '' pieces
3 stalks celery, cut into 2'' pieces
2 Tbls flour

Directions:
Directions:
In a 6 quart dutch oven, brown roast on all sides.
Spoon off any fat. Stir in mushroom soup, onion soup mix and 1 cup water. Reduce heat to low. Cover and simmer 2 hours or until meat is tender, turning occasionally. Add vegetables and cover and cook for 40 minutes or until roast and vegetables are fork tender. Remove roast and vegetables to a platter. Over medium heat, cook sauce until slightly thickened. In cup, stir together flour and remaining 1/4 cup water until smooth. Gradually stir into Dutch oven. Cook until mixture thickens and boils, stirring constantly. Serve over roast and vegetables.
