Ingredients:  
* 2 large leeks sliced 1/4 inch
* 2 minced cloves of garlic
* 1 1/2 pounds peeled & cubed Yukon Gold spuds
* 1 cup cubed carrot
* 2 cans low sodium chicken broth
* 1 cup half & half
* 1 cup shredded Swiss cheese { found by other shredded cheeses in dairy case
*salt, pepper, parsley, dill to taste

*Heavily spray your favorite soup pot with cooking spray.
*Add leek & garlic & saute 3-5 minutes.
*Add spuds carrot & broth & simmer about 20 minutes 'til tender.
*Add cheese & half & half continually stirring on low until well blended.* Season to taste.
