8 oz. cream cheese, softened
1 tbsp fresh squeezed lemon juice
2 tbsp red onion, diced
1 tbsp fresh basil, chopped
8 oz. smoked salmon, sliced
2 tbsp small capers, drained
1 English cucumber, sliced

Directions:
Directions:
Combine all ingredients in a bowl until well blended.
On a piece of wax paper, arrange salmon into a rectangle about 3 inches wide and 12 inches long, slightly overlapping each piece. Spread a thin layer of cream cheese mixture on the salmon, sprinkle with capers. Roll up like a jelly roll.
Refrigerate for 1 hour and cut into 1/2" slices.
Place atop cucumber slices.
