Whites of 2 large eggs
1/8 tsp cream of tartar
pinch of salt
2/3 cup superfine white sugar

Ganache
12 ounces of semi-sweet chocolate chips
1 cup heavy whipping cream

1 Quart fresh strawberries or raspberries rinsed and completely dried

Have egg whites at room temperature. Make sure your utensils are completely grease and/or oil free.
In a medium bowl beat eggs until slightly frothy. Add cream of tartar and pinch of salt and continue beating until soft peaks form. Slowly add sugar and continue beating until stiff peaks form. Put in a pastry bag fitted with a medium tip and pipe small discs (1 1/2" diameter) onto a cookie sheet lined with parchment or brown paper. Bake in a 250 F. oven until the meringues are completely dried out, approximately 2 hours. Time will vary according to the size of your circles.
In the top of a double boiler over simmering, not boiling water, melt chocolate chips and slowly stir in cream until well combined. Using a teaspoon, place a small amount of chocolate on top of each meringue, and place a berry on top of the chocolate.
