3 large yams
1/4 c butter
1 9 oz can crushed pineapple
1 t. orange rind
2 T orange juice
3/4 t salt
2 T brown sugar
3 T flaked coconut (optional)

Directions:
Directions:
Preheat oven to 350. Scrub potatoes and cook in boiling water for 30 minutes or tender; drain. Mash yams with a fork in a large bowl; mix in butter until melted, then add pineapple with syrup, orange juice, orange rind, and salt. Spoon into a greased 1 1/2 qt. baking dish. Bake for 30 minutes then sprinkle coconut over yams. Cook for an additional 15 minutes or until coconut is lightly browned.
