1 lb smokes sausage links- cut in 1/2 or use party sausage.
2 1/2 lbs beef stew meat
1/4 cup flour
1 1/2 tsp salt
1/2 tsp pepper
3 med onions (1 1/2 cups) chopped
3 garlic cloves, minced
3/4 cup stuffed green olives
1 tsp thyme leaves
2 15 0z cans dark kidney beans
2 (4 1/2 0z) jars whole mushrooms
2 - 3 cups dark red wine

In a lge skillet, brown the sausages and then remove from skillet with a slotted spoon. Set aside. Coat the beef with the flour and salt and pepper mixture. Add the beef, onions, garlic, and fry until brown and tender. Heat oven to 350. Use a 5 qt deep earthen cassarole. Add the remaining ingredients except the wine.Mix well and then add 2 cups wine. Bake 3-3 1/2 hrs until tender, stirring occasionally and adding more wine if nec. Uncover during the last 45 min th thicken the cassoulet.
