1 bag baby spinach washed and dried
4 slices cooked bacon
2 oz pre-packaged grilled chicken strips
1/2 small Granny Smith Apple
2 oz cheddar cheese (cubed)

Dressing:

Miracle Whip
Orange Juice
Milk

Directions:
Directions:
Cook, drain and crumble bacon. Set aside. Heat up chicken in a very small amount of fat (you can use some of the bacon fat, or olive oil). Slice apple very thin. Sprinkle with a little lemon, lime, or orange juice to keep it from turning brown. Toss spinach, chicken, bacon, apple, and cheddar cheese chunks. Top with dressing.

Dressing:

Mix a couple of large spoonfuls of Miracle Whip. Add orange juice, one teaspoon at a time until it tastes good. Thin with a tiny amount of milk if desired.

Mitchell's Restaurant has a Chopped Chicken Salad that is absolutely wonderful. This is my take on their salad. They add scallions and fresh black pepper. This is a meal in itself.
