6 medium white onions
1 four oz can mushrooms, stems & pieces, chopped
1 tbsp finely chopped pecans
3 tbsp butter
salt and pepper
1 c beef consomme
grated cheddar cheese
paprika

Directions:
Directions:
Peel onions and core, leaving the shells about 1/2 inch thick. Reserve the pulp. Cook cored onions in boiling water until barely tender. Chop raw onion pulp removed when coring. Saute chopped onion, mushrooms and pecans in butter for 10 minutes. Season with salt and pepper. Stuff onions with mushroom mixture. Arrange onions close together in baking pan. Pour beef consomme around them. Bake at 300 degrees for 30 min. Sprinkle w/grated cheese and paprika and bake 30 min longer. Onions may be prepared 1 day ahead and refrigerated covered unitl time to add consomme and bake.
