Pineapple-Orange Cake Recipe

1 Duncan HInes Butter Cake Mix
1 can Mandarin oranges, juice too
1/2 c Puritan oil
3 eggs
Frosting:
1 large can crushed pineapple
1 large vanilla instant pudding mix
1 12 oz Cool whip

Directions:
Directions:
Mix all together and beat 2 minutes with mixer. Equally pour batter into 3 greased and floured cake pans (8 or 9 inch). Bake 20 minutes in 350 degree oven. Cool thoroughly before frosting.
For frosting:
Put pineapple with juice in large mixing bowl. Add pudding mix and fold into pineapple. Then fold in Cool whip. Frost layers of cooled cake and stack. Refrigerate before serving. Garnish with thinly cut slices of orange and mint leaves.
