"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

4 - 5 lbs country style pork ribs

1 c. catsup
1/4 c. vinegar
1/4 c. Worcestershire sauce
1 tsp. salt
1 scant tsp. pepper
2 tsp. chili powder
1 or 2 finely chopped onions
1 1/2 c. water
1/4 tsp. cayenne (optional)

Blend all ingredients and pour over the ribs in roaster.
Cover and bake 1 -1/2 to 2 hours.
Uncover and bake 30 minutes longer to thicken the sauce a little.

Personal Notes:
Personal Notes:
This is Mary Gregerson's recipe and it is delicious!.
The little bit of cayenne just adds a little kick without being too hot. If the ribs aren't tender enough after the 1 1/2 hours cook until tender and then remove the lid to thicken the sauce.
I cook the ribs a half hour or so without the sauce to melt some of the fat off - then I add the sauce.
