1 1/4 c. packed brown sugar
1/2 c. oil
1 egg (or two egg whites)
1 1/2 c. diced rhubarb
1/2 c. chopped nuts
2 1/2 c. flour
1/2 tsp salt
2 tsp vanilla
1 c. butter milk
1 tsp. soda
1 tsp. baking powder

Directions:
Directions:
Mix brown sugar, oil, egg and vanilla. Add milk, rhubarb and nuts. Combine flour, salt, soda and baking powder and add to the rest of the ingredients. Pour in greased muffin pan.

TOPPING: Mix together and sprinkle on each muffin before baking.
1/3 c. sugar
1 1/2 tsp cinnamon
1 T. melted butter
Bake in 400 degree oven for 15 to 20 min.
