No Crust Zucchini Quiche Recipe

6 c. grated zucchini
8 oz. cheddar cheese (grated)
1 c. buttermilk baking mix (Bisquick)
c. vegetable oil
4 eggs
tsp. Italian seasoning
2 medium green onions (chopped)
1/4 c. Parmesan cheese

Directions:
Directions:
Combine all ingredients except Parmesan in a large mixing bowl. Mix and fold to a fluid consistency (no lumps). Pour mixture into a 9 baking dish (pie plate works). Sprinkle Parmesan cheese on top of quiche.
Bake at 400 F for 30-35 minutes until top is toasty brown. Test center by poking with fork, the fork should come out clean.

This healthier version of the traditional quiche was one of the dinners I had at the home of an old grade school friend during my 1991 visit with her in San Diego, California. I liked it so much her mom gave me the recipe, and it's still one of my favorites. But as you can see you really need to like zucchini! (Julie my friend from our college days at WIU, Macomb, IL- Jennie)
