Pastry for a 2 crust 9" pie
36 Ritz crackers
2 c. water
2 c. sugar
2 t. cream of tartar
2 T. lemon juice
grated rind of 1 lemon
Butter or margarine
cinnamon

Directions:
Directions:
Line pie pan with bottom crust. Break Ritz crackers coarsely into pastry lined pan. Combine water sugar and cream of tartar in saucepan, boil gently for 15 min, add lemon juice and lemon rind. Cool and then pour over crackers, dot generously with butter or margarine, sprinkle with cinnamon. Cover with top crust. Trim and flute edges together. Cut slits in top crust to let steam escape. Bake in hot oven 425 for 30-35 minutes until crust is crisp & golden. Serve warm.
