2 cups chopped beets
2 cups chopped cabbage
2/3 cup sugar
2 tbsp. horseradish
1 tsp. salt
1/3 tsp. pepper
vinegar

Directions:
Directions:
Mix chopped beets and chopped cabbage with other ingredients except vinegar. Cover with vinegar and allow to stand several hours or overnight. Serve with meat dishes. Drain before placing in serving dish.

This is a nice side dish for any beef dinner. My mother made this often and it was served at many pot roast dinners at the church in the 40's, 50's, and 60's.
