1 1/2 C all-purpose flour
1/2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt (optional)
1/4 C shortening
1/2 C sugar
1 egg
1 tsp. vanilla
1 1/4 C bran flakes or 1 C Minute oats
1/2 C chopped pecans (or walnuts)
1 1/2 C mashed bananas (@ 3 small)

Directions:
Directions:
Pre-heat oven to 350. Mix dry ingredients. Mix moist
ingredients. Combine all by adding dry ingredients slowly to
moist ingredients. Pour into bread pan that has been sprayed
with baking spray. Bake for 50 minutes. Bread will start to split at
the top. Inserted pick should come out clean.

I like raisins in my banana bread. Sometimes I will add 1/2 cup
of raisins, or I use a bran cereal that already has raisins in it.
Using Oats in this recipe instead of the bran flakes works
really well also.
