4 cups grated raw sweet potatoes
1 stick butter, melted
1/2 tsp ginger
1/2 tsp nutmeg, freshly grated
1 tsp cinnamon
1 tsp vanilla
1-1 1/2 cup brown sugar
3/4 cup millk

Directions:
Directions:
Preheat oven to 350. Combine all ingredients in a large bowl. Stir and mix well. Pour into a greased quart sized shallow baking dish. Bake for 50-60 minutes or until well set. After about 35-40 minutes, pull baking dish out and stir pudding. Place back in oven for the remaining 15-20 minutes.
