2 cups new potatoes, thinly sliced
2 cups fresh spinach leaves
1/2 cup red onions
1/4 cup fresh mushrooms sliced
1/4 cup low-fat Italian dressing

Directions:
Directions:
Steam the potatoes with the skins on until tender.
Slice the onions into thin rings.
Wash and drain the spinach leaves well.
Combine the potatoes, mushrooms, onions and spinach leaves in a bowl.
Toss with the dressing to coat well.
Chill and serve.
