1 1/2 cups warm water
3 tsp sugar
1 tsp salt
5 to 6 cups flour

Directions:
Directions:
Dissolve sugar and salt in water, add starter (room temperature) and mix well. Add 5 cups of flour. Knead well and put in a bowl, covered with a wet towel, in a cool place to rise for 12 hours. Punch down, then let rise again for 12 hours. After kneading the third time, shape into loaves and place on a greased cookie sheet. Slash tops of the loaves with a knife. Cover with wet towel and let rise for 3 hours or until double in size. Brush with water as often as desired to develop a thick crust. Bake in steam (pan of water at the bottom of the oven) at 400 for 35 minutes.

Always use a glass bowl and wooden spoons. Do not use metal. When using sourdough, always save enough to replenish your supply by "feeding" with equal portions or milk and flour.
