1/4 - 1/3 cup uncooked rice
3 cups milk
1/3 - 1/2 cup sugar
1 tsp. vanilla
1/2 tsp. salt
2 egg yolks
2 egg whites
1/4 cup sugar

Directions:
Directions:
Wash, drain rice, and place in double boiler with milk. Cook over hot water until rice is tender. Add 1/2 cup sugar, vanilla, and salt. Beat egg yolks slightly and blend thoroughly (slowly) with rice.
Continue to cook over hot water until mixture thickens.
Pour into buttered baking dish. Beat egg whites until stiff. Add 1/4 cup remaining sugar and put meringue on pudding. Bake at 350 degrees for about 20 minutes.
