3 eggs
l c. oil
2 c. sugar
3 c. flour
3 tsp. vanilla
2 c. grated zucchini
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. cinnamon
1/2 c. chopped nuts

Directions:
Directions:
Mix eggs, oil and sugar - beat well. Add flour, vanilla, zucchini, baking soda, baking powder, cinnamon and nuts.

Mix well with spoon.

Pour into 2 greased loaf pans. Bake in 325 oven - for approx. 1 hour (until done). If you only bake one pan bake at 350.

Remove from pans and cool.

This is a light zucchini bread with a delicious top when it finishes baking. I bake many of these every Christmas time and give as gifts to many of my neighbors and friends.
