4 large baking potatoes
vegetable oil
2 T. butter
1/2 c. sour cream
1/4 c. milk
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Rub potatoes with oil, place in shallow baking pan. Bake at 400 for 1 hour or until tender. Cool. Cut in half lengthwise. Scoop out pulp, leaving a 1/4 inch shell; set shells aside.
In a mixing bowl, combine pulp, butter, sour cream and milk; beat until creamy. Stir in salt, pepper to taste.
Spoon into shells very carefully. Return to baking pan. Bake at 350 for 35-40 minutes or until lightly browned. (These can be made quite fancy by putting cheese on top when baking them or a strip of pimento. If you like pimentoes, they can be added to potatoes as you are mixing them before they are baked the second time)

Once potatoes baked, approx. 20-30 minutes to stuff and then hour to bake.

This recipe is terrific because it can be made up the day before you are going to serve. We find it to be a favorite for the holidays and for company.
