10 good sized potatoes cooked, peeled and diced
1 large onion, diced
l green pepper, diced
1 c. melted margarine or butter
1/4 lb. (more or less depending on your taste) cheddar cheese, cut into squares
Chopped parsley
l slice fresh white bread, chopped
Crushed Corn Flakes
milk to moisten

Directions:
Directions:
Combine the potatoes, onion, pepper, cheddar cheese, parsley and chopped bread. Then add the melted butter and just enough milk to moisten well. Put into a buttered casserole and cover with crushed corn flakes.

Bake until brown - approx. 45 minutes in a 350 oven. This may be made ahead and frozen. I also prepare this on the day before I need to serve it. It is an easy recipe to increase so you can serve to a large group.

This comes from Ohio where we would make this in large quantities for the men who would come to the farm and help with the crops. Living here in Conn. I have used it many times for picnics, birthday parties, and even holiday meals. So often, when I take these to a party, I get many requests for the recipe.
