l stick butter
l c. boiling water
l c. flour
1/4 tsp. salt
4 eggs

Directions:
Directions:
Add the stick of butter to the 1 cup boiling water. Stir to melt the butter. Add 1 cup flour and salt at once.
Cook, stirring vigorously, until mixture is smooth and forms soft ball that does not seperate.
Cool mixture slightly, add 4 eggs, one at a time beating vigorously after each egg. Beat until mixture is smooth.
Drop batter by spoonfuls onto a greased cookie sheet.
Bake in hot oven 450 for 15 minutes on a top shelf in the oven, and then turn oven to 325 and lower the puffs to regular shelf for baking. Bake another 25 minutes. When cooled fill the cream puffs and then sprinkle with confectionary sugar.

Here is a great filling for these puffs:
Beat all at same time: 1 package instant pudding (I usually use vanilla); 1/2 pint (1 cup) heavy cream and 1 cup milk.

The preparation does not take too much time. Baking time is quite a while.

I found this recipe in a cookbook that I received when we got married in 1958. It has been a tried and true dessert for me. You can make them very large and fill with ice cream or you can make nearly 50 if you use a teaspoon and fill with cream.
