1 med. onion chopped
2 green peppers chopped
1 c. bottled salsa
2 15 oz cans stewed tomatoes
1 T. cumin
2 T. chili powder

Directions:
Directions:
Combine in frying pan. Bring to boil on medium heat, bring to low and cook veggies till tender.
Add: 2 -15oz cans black beans (rinsed & drained) cook to warm.
Layer in casserole dish:
1/3 of mixture, cover with layer of flour tortillas, 1/3 mixture, jack cheese layer, layer of tortillas, last 1/3 of bean mixture. Bake in 350 degrees for 20 to 25 minutes. After it comes out, add 1 more layer of grated cheese. Top with lettuce, sour cream, olives , tomatoes, salsa.
