"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Two 2# packages hash browns
1-1/2 c. grated cheese
1/2 c. chopped onion
1 can cream celery soup
1 can cream potato soup
1 can cream mushroom soup
one carton 10-oz sour cream
salt and pepper to taste
1 stick of melted butter

Directions:
Directions:
Let frozen hash browns stand at room temp. a while to thaw. Then mix all ingredients together (except melted butter), place in a 10 x 15 casserole and pour melted butter over top. Bake 1 to 1-1/2 hours at 350. Sometimes I get the hash browns with bell peppers and onions, then I don't add the chopped onion.
