20-22 tiny new potatoes (2 lbs) or 2 obs. all-purpose potatoes
3 tbsp. butter, 2 tbsp prepared horseradish, 3/4 c. whipping cream, light cream or milk, Salt & pepper to taste.

Directions:
Directions:
Scrub potatoes, leaving peel on if you like. Cut them into halves or quarters. In a large saucepan, cook potatoes in small amount of water (boiling & lightly salted) for 15-20 minutes or till tender. Drain off water.
Mash with a potato masher or beat with electric mixer on low speed. Add butter and horseradish. Season to taste with salt & pepper. Gradually beat in cream or milk to make light and fluffy.
