2 medium potatoes 2 large eggs
2 tbsp mayonnaise 2 tbsp spicy brown mustard
1 medium onion 1/3 cp sweet peas
1/2 cp Edam or Gouda cheese
2 tbsp tarragon vinegar* 3 tbsp pickel relish
Dash of garlic powder
Salt/pepper/sugar to taste

Boil potatoes (unpeeled) until done but firm. Hard boil eggs.
Combine mustard/mayo/vinegar.
Cut potatoes/cheese/onions/eggs in bite sized bits, add peas and sprinkle with garlic powder/salt/sugar/pepper. Lightly toss, then add relish and sauce, lightly toss again. Cover, let stand in 'fridge at least 2 hours before serving.

*Tarragon vinegar- 2 1/2 tbsp red wine vinegar 1/2 tsp. tarragon leaves. Heat (do not boil) set aside until cooled. Or you can buy it prepared.
