2 Lbs new potatoes, washed & unpeeled
2 cloves garlic, minced
3 Tbsp oil oil
1 Tsp McCormick Italian Seasoning
1 Tbsp Rosemary
1 small onion minced, about 2 Tbsps.
1 Tbsp parsley flakes

Directions:
Preheat oven to 400 degrees. Mix all ingredients except potatoes in small bowl until throughly mixed. Put potatoes in a large bowl, pour herb/oil mixture over them and and turn the potatoes until they are completely covered with mixture. Transfer potatoes to a large baking dish. Drizzle remaining oil mixture over potatoes. Bake uncovered for about 45 minutes or until pototes are easily pierced with a fork.

These are absolutely mouth watering good. You can change up the herbs depending on personal preferences. Thyme, Rosemary or tarragon are also good. Use extra virgin olive oil if possible. If you don't like the flavor of olive oil, use the butter flavored Crisco oil. If you cannot find new potatoes, quarter regular red or gold potatoes. If you are baking a roast, meat loaf, etc you can cook the potatoes at the same time, just allow more time if the temprature is lower than 400.
