¾ kg de lomo
100 gr. de almendra
25 gr. de aceitunas
1 jitomate (tomato) grande
1 cebolla chica
2 dientes de ajo
50 gr. de manteca o aceite
1 cucharadita de perejil

Directions:
Directions:
Se fríe el lomo, cuando haya dorado por todos lados, se le agrega una salsa hecha con la mitad de las almendras doradas en aceite, y la otra mitad peladas, molidas con el jitomate, ajo, cebolla, pimienta, orégano seco y sal. Se deja freír esto con el lomo y se le añade agua hasta cubrirse, y las aceitunas picadas y el perejil. Se sazona con un poco de azúcar y sal si le hace falta. Se sirve con puré de papa.
