8 medium potatoes - 3 lbs.
6 tbsp. oil of your choice
6 tbsp. vinegar
1 tsp. sugar
1 small onion - cut fine
1 cup finely cut celery
salt and pepper to taste
4 tbsp. mayonaisse - or more as you desire
a little chopped green or red pepper optional

Boil potatoes, but do not overcook. Cool a little, peel and cut up. Sprinkle on vinegar and let stand 10 minutes. Add oil, and sprinkle on sugar. Toss gently. Then add onion, celery, salt and pepper and chopped pepper. Lastly, when cool, add mayonaisse and toss gently. Cover with plastic wrap and refrigerate. (Optional - 5-6 shakes of dill weed is a nice addition.)
