3 T. Butter
3 T. Flour
1 1/2 t. salt
1/4 t. pepper
1 can Chicken Broth
6 Rib or Loin Pork Chops
2 T. cooking oil
satl and pepper
6 cups thinly slice potatoes
1 med. onion sliced
Paprika and fresh chopped parsley (optional)

In saucepan melt butter; stir in flour, salt and pepper. Add chicken broth, cook and stir constantly until boiling. Cook 1 min. set aside. In a skillet, brown pork chops in oil, season to taste. In a greased 13x9 baking dish, layer potatoes & onion; season to taste. Pour broth mixture over potatoes. Place pork chops on top. Cover and bake at 350 degrees for 1 hour, uncover and bake 30 minutes longer. Sprinkle w/parsley and paprika.
