1 bag grated or shredded potatoes (or use frozen and thaw, squeezing out liquid)
1 large onion, shredded or grated
2 beaten eggs
3 tbsp. crushed crackers or matzoh meal
Oil for frying

Directions:

Mix ingredients and form into small cakes. Fry in hot fat until golden brown. Serve with sour cream, applesauce or jelly.
