5 c. sugar
1 c. sweet cream
2/3 c. hot water
1 tsp. flavoring extract (banana, lemon, vanilla, etc.)

Directions:
In heavy saucepan combine sugar and hot water. Bring to a boil and, stirring constantly, slowly add cream to boiling mixture so that it does not stop boiling. Clip candy thermometer on side of pan, making sure thermometer bulb does not touch pan bottom. Cook and stir until mixture reaches 252 degrees. Remove from heat and add flavoring. Pour into buttered pan. When mixture is cool enough, butter hands and stretch candy repeatedly until firm and white. Cut into bite-sized pieces.
