2 pounds flank steak or beef short ribs
2 marrow bones
1 large onion, coarsely chopped
1 medium bunch beets, peeled and sliced (or use canned)
6 c. water
1 small head cabbage, chopped
3 tart apples, peeled, cored and chopped
1 8-oz. can tomato sauce
1 tsp. sugar
1/2 tsp. salt

Directions:
In a large pot, simmer beef and marrow bones, onion and beets in water about one hour. Cool enough to handle and remove and discard bones, beets and onion. Add remaining ingredients to pot with beef and bring to a boil. Simmer for 1-1/2 to 2 hours. Serve with sour cream, black bread and butter
