Ingredients:  
4 c grated zucchini
1 3/4 c biscuit mix (like Bisquick)
3/4 c grated parmesan cheese
1/2 c vegetable oil
4 eggs, beaten
1 lg onion, finely chopped
3 garlic cloves, minced or put through press
1/2 t salt
1 4 oz can mushrooms, drained and chopped
1/2 t dried oregano, crushed

Directions:
Directions:
Mix all ingredients until well blended. Spread into a greased 9 X 13 pan. Bake for 30 - 40 minutes at 350 degrees. Cut into small squares and serve warm or at room temperature.

This can also be cut into larger squares and served hot, as a side vegetable.
