2 tbsp. olive oil
1 small onion minced
11/3 cup dry white wine (optional)
1 28 oz. can Italian plum tomatoes
1/4 cup fresh basil leaves torn or cut into small pieces
salt to taste

Directions:

Saute onion in oil until translucent. Add wine. Simmer until almost evaporated. Add other ingredients. Simmer covered about 45 min. until thickened. I
usually double this recipe.

Betty Aspinall, Theresa McHugh's sister, was our wonderful next door neighbor for 40 years. She was a true friend, had a vibrant personality, was loyal, and was always frank about her opinions. She surprised us by getting married at age 76 to Fred Aspinall. She sent us many cooked Italian dinners and other treats. Her afternoon cocktail hours were thoroughly enjoyable, where she shared her knowledge of British history, religion, politics, current books, family history, opera, food, world travels and much more. She died at age 96 in 2002. We miss her!
