2 - 4 chicken breasts (boneless or bone in)
flour
oil for browning
1 large onion - large dice
4 carrots - cut in 1 inch pieces
1-2 cans of chicken broth
3 potatoes - cut in fourths
1/2 pkg. frozen peas - rinsed under hot water
pepper to taste

Dredge chicken in flour and brown skin side down in hot oil in large fry pan. Brown other side. Cook 3 min. Add carrots, onions, and 1 cup of broth. Cover and simmer 5 min. Add potatoes. Cover and simmer until vegetables are done. Add more broth as needed. Add peas last 5 min. Stir liquid gently and loosen chicken from bottom of pan. Takes about 30 min. cooking time. Makes own gravy.

This is easy to put together and makes a nice dinner anytime. I've also used chicken thighs. I think they are more flavorful and more juicy.
