2 eggs
2 8 oz packages cream cheese
3/4 c. sugar
1 tsp. vanilla
1-2 tsp. lemon juice 1
1 tsp. grated lemon rind
Vanilla Wafers

Directions:
Directions:
Beat eggs, well and add cream cheese, sugar, vanilla, lemon juice and grated lemon rind. Blend well. In muffin tin with cupcake paper put one Vanilla Wafer on the bottom. Fill about full with cheese cream mixture.
Bake @350 for 10-12 minutes. TURN OVEN OFF and LEAVE CAKES IN OVEN until cool. Remove cakes from oven, they will have an indented top that can be filled with pie filling. (cherry or blueberry)
