4 cups frozen hash brown potatoes (thawed)
3 T. vegetable oil
1-1/2 lb. ground meat
salt & pepper to taste
1 pkg. brown gravy mix
1 cup water
1 can corn (drained)
1 can green beans (drained)
1-1/2 cup shredded cheddar cheese
1 large can fried onion rings

Directions:

In a shallow baking dish combine potatoes and oil. Press firmly into bottom and sides. Bake @ 400 degrees for 15 minutes. Brown meat. Add salt, pepper, gravy mix and water and bring to boiling. Add vegetables. Cook for 5 minutes. Stir in 1/2 of the cheese. Pour into potato shell. Bake uncovered @ 350 degrees for 15 minutes. Sprinkle with remaining cheese and onion rings. Bake 5 minutes longer.

This is a great one dish meal. The only other thing you need is some dinner rolls and maybe a salad.

When I first got this recipe it called for a bag of mixed vegetables. My kids wouldn't eat anything other than corn and green beans so I substituted that instead.
